Donati Family Winery Description
The Donati Estate vineyard enjoys a variety of soils from limestone to decomposed granite to clay loam. Excellent natural soil drainage to limit water uptake in the vines, coupled with Paicines’ coastal weather, provides ideal conditions for optimal fruit development.
Winemaker Dan Kleck has been producing premium wine for the past 29 years. Working closely with Vineyardist Matt Donati to elicit full flavor development in the vineyard, Dan views his role as one requiring minimal intervention in the wine cellar. “It is a pleasure to be presented with top-quality fruit with outstanding natural balance and distinctive personality.”
Donati Wines are truly the product of the vineyard. The majority of production is Red Bordeaux grape varieties, especially Cabernet Sauvignon, which is made into a varietal wine, and weaved into the Claret, Meritage, and Merlot. As they learn more about their microclimates, vineyard blocks and clones, the Donatis plan to offer limited quantities of Syrah, Cabernet Franc, and Matt’s favorite, Malbec.
Although the vineyards dictate mostly red wine production, the Donatis would betray their history by not taking advantage of the fruit from the white vines. Gnarled old Pinot Blanc vines produce a stingy amount of fruit that translates into a complex and intense Pinot Blanc. Chardonnay thrives in the cool, hilly vineyards. Production of these white wines will remain limited but will be augmented by a small amount of Pinot Grigio.
