Tolo Cellars Description

Far out along Adelaida Road you will notice a little red farmhouse that just beckons you to come explore.  The farmhouse, built in the 1880s, doubles as a tasting room for Tolo Cellars and as a showcase for exclusive Provencal linens, pottery, tablecloths and cookbooks selected especially for the discerning wine enthusiast.

Upon entering the winery, you will have an opportunity to peruse all of the fine wares that the gift shop has to offer, or if you are tired after a long day of wine tasting, you can step out onto barn’s patio and kick up your feet and relax at one of the tables.  Crossing over the threshold from the gift shop to the tasting room, you are welcomed by the warm smile of none other than the winemaker and proprietor himself.  The tasting room is located within what was once the barn’s kitchen and when you walk in you feel as though you are walking into a friend’s home.  The tasting bar is intimate and warm, which encourages you to mingle with your fellow tasters, or to step out through the sliding glass door onto the lawn to enjoy your wine in solitude.

The wines at Tolo Cellars are fermented on native yeast, allowing the wine to exude the robust and wild flavors of the vines.  Tolo Cellars produces a diverse array of wines including Bourdeux varietals, a Rhone blend, Zinfandel and their flagship wine Asini, which is a unique blend of Sangiovese and Zinfandel.

After our fabulous tour @ Justin, my wife and I went to Tolo Cellars, and met the young winemaker and proprietor Josh Gibson. In wine circles he is said to be "flying under the radar", but definitely not a place to be missed. As you pull up to a "little red school" which serves as the tasting room, which was closed the day we were there so I think we hung out in the kitchen which has a bar facing the sliding door entry way. He was very gracious to grant us a private tasting during the harvest. We had a great time talking about his wine making style and how he got started. The wines are very good and had a long persistent finish. (The Cabernet and Zin) The wine descriptions are very different than most, but are very smartly written. We walked out with six bottles and wished our budget could have afforded us more. Give Josh a call or just stop by during tasting room hours. Josh Gibson is doing amazing things at his "far out" winery, Tolo Cellars. I was pleasantly surprised with the very high quality of this young wine maker's wines. Don't miss the Cabernet.
